I recently made this treat for an open house event I was doing for my challenge groups and it was a hit! I wanted the guests to know that they could still indulge in some sweet treats while doing the 21 day fix!
Here is the recipe, enjoy!
Serves: 16 (1 square each) Prep Time: 20 minutes Cooking Time: 23 minutes
21 Day Fix Container Equivalents: 1 yellow, 2.5 teaspoons
Non stick cooking spray
1 1/2 cups all natural peanut butter
1/2 cup raw honey (or pure maple syrup)
2 tsp. pure vanilla extract
2 large eggs, at room temperature
1/2 tsp baking soda, gluten free
- Preheat oven to 350F
- Lightly coat 8×8-inch baking pan with spray. Set Aside.
- Combine peanut butter, honey, extract, eggs, and baking soda in a large bowl; mix well.
- Evenly spread peanut butter into prepared pan. Smooth top with a spatula.
- Squares may be a little soft when coming out of the oven, but they will continue to cook.
- Cool. Cut into squares.
