I have gotten out of the habit of posting my weekly meal plans so this is me committing again! I am trying something new this week. I am only prepping two meals for the week which will be my lunch and dinner. The rest of my food are just snacks that don’t require prepping and will fill in the gaps! If you don’t have time to make breakfast in the morning- you will have to plan for that!
This week I am making Crockpot BBQ Pineapple Chicken which is super simple. All you need is a bag of frozen pineapple, a bottle of BBQ sauce and chicken (I have been using chicken thighs)! I cook it in the crockpot on low for 6 hours or high for 4 hours. I will add brown rice and steamed veggies to complete the meal.
For Dinner I am making a recipe from skinnytaste.com- Asian Turkey Meatballs with Gochujang Glaze. I have never made this before but I am really excited to try it! I will just be pairing quinoa and steamed broccoli with it!
